Lunch, Lunch, and More Lunch

Good afternoon all!  I hope your lunch is as tasty as mine, leftover homemade chicken pot pie with thyme and lemon.  My theory is, if there is one serving left the cook should get it!  

We made it to the Dallas Zoo on Sunday, and had a blast.  They have winter pricing on the tickets and parking, and only some of the animals are put away to stay warm.  It was a great way to see if it is worth paying full price later.  
It IS!

Our afternoon was spent in the new half where there are more naturalistic habitats for a variety of animals together.   We got the impression that "Stubby" over there on the right is the boss.  I wonder how she lost her tail.  Then again, maybe I do not want to know.

Have I ever shared my key to having a nice Sunday afternoon?  It is one word, crockpot.  Seriously, they are even better than eating out.  You get to take your time changing your clothes and calming the kids down after church.  You get the peace of mind that it is healthy, hot, and probably cost a lot less than eating out.  

Most of you know we downsized.  Yep, I only have three crockpots now.  Hey, a gal has to have her priorities!

  1. I, too, love my crockpot(s) any day of the week. Right now I have chili simmering in it for supper. I like just about anything in a crockpot, but my favorite may be for French dip (roast beef). Have you ever visited crockpot365.blogspot.com? She is gluten-free and many of her recipes are as well. Great resource!

    Those elephants are making me feel warm. I bet you don't miss the teens for daytime temps!

    1. Oooh, Hubby would like the French Dip. I had forgotten about that blog. Back I go! To the website, not the freezing temperatures.

  2. I never make things in the crock pot anymore (it's just me and hubby most of the time) but I do love to do a roast with cream of mushroom soup and a packet of Onion Soup Mix to make gravy.

    1. I am so lazy that I still cook large amounts, and freeze portions. The lazy part is pulling them out later instead of cooking every day. More time for thrifting!

  3. Yes! Elephants AND crockpots!
    Our fav recipe lately is you take a small bag of frozen veggies 1st. Then layer chicken on top (We usually use 2 large boneless chicken breasts...about 2 lbs.) Then layer 2 cans cream condensed soups (any flavor you want) on top. That's it! If the chicken and veggies are frozen there will be enough moisture. Then we serve with homemade biscuits. Or you could have it with crackers. Or just by itself.

  4. Funny you mention crockpots - this week for the first time in probably 20 years - we are a ONE CROCKPOT HOME!! I gave my smaller one to my daughter! I do agree - it's such a wonderful feeling to know that something is happily cooking away on the counter, just waiting for your return home. When my boys were teenagers, and I would have to work late, I'd make crockpot full of a tasty casserole and they'd just help themselves when they were ready.

    It's so nice to read about your new adventures. I am so glad for you that you are settling in so well. I cannot imagine that I would be quite so resilient!
